We started with Castle Black — a bold, no-nonsense American Imperial Stout loaded with deep roast character and rich notes of dark chocolate and coffee. We let it rest in Willet Rye barrels for over 10 months, allowing the beer to soak up just the right amount of complexity. Afterward, we bottle-conditioned it, making it perfect for aging or enjoying in good company.
The result is a bigger, bolder finish that's remarkably balanced, with robust flavors of charred oak, spicy rye, smooth vanilla, and subtle hints of dark fruit.
