We began with Castle Black — a bold American Imperial Stout packed with rich roast character and intense notes of dark chocolate and coffee. After aging for over nine months in Jim Beam barrels, it reached the perfect depth and complexity. We then bottle-conditioned it, making it ideal for cellaring or sharing with good company. The result? A powerful, yet beautifully balanced stout with pronounced flavors of charred oak, smooth bourbon, warm vanilla, and subtle hints of dark fruit.
