This spontaneous Lambic style was brewed with turbid mash and aged whole cone hops. We then let the wort cool overnight in our coolship allowing native yeast and bacteria to land in the beer. The next morning we transferred the beer to used red wine barrels to ferment on the native microorganisms. After many moons of ageing in the barrels we selected a blend of barrels to blend into this final product. Bottle conditioned with alfalfa honey.
