This mixed culture saison was brewed with Barley, raw white wheat, spelt and oats. It fermented in used White Wine barrels for just over a year with a mixed culture of yeast and beneficial bacteria. Post barrel conditioning it went through a secondary fermentation in the bottles with Goldenrod Honey.
