This farmhouse ale was fermented warm with an estery Belgian yeast strain before aging in our neutral French oak puncheons with our mixed culture. After barrel aging, we transferred the beer onto local peaches, and then dry hopped with whole leaf Mandarina Bavaria. Notes of peach dominate the flavor profile while our mixed culture contributes balanced funk with soft, refreshing acidity.
