Barrel Aged All Wise (Omnipollo collab)

Barrel Aged All Wise is our first barrel aged collaboration with Omnipollo. This BA version of banana peanut mud pie is named after Elvis, whose name is said to translate to All Wise. We let the All Wise base sit in a Weller barrel for just over 18 months before we added banana, peanut, chocolate sandwich cookies, Madagascar vanilla, and lactose. Pouring pitch black with a deep nose of crushed chocolate covered peanuts and split vanilla beans, we get chocolate forward flavors laced with bourbon glazed peanuts, banana frosting, chocolate cookie wafers, and dollops of marshmallow fluff packed into a velvet-like texture with wisps of boozy vanilla barrel heat that helps balance out all of the adjuncts.
