This traditional witbier is a passion project for our staff. We collaborated with our friends at Valley Malt (MA) to produce 'wind' malt (also known as 'air-dried' malt) for Adem--a traditional, very light malt that was historically dried in the lofts of Belgian barns, absent any kiln, and used for witbier production. Notes of orange peel, peppercorns and floral hay meld with the wheat-forward base to provide a taste that hearkens back to witbier's origins.
