Our Berliner-style Weisse is brewed using a traditional three-part decoction method, incorporating the thin part of the mash in each decoction. Hops are added and boiled during this process. Afterward, the unboiled beer rests overnight in the coolship. The following day, it's transferred to tanks and pitched with our house yeast, resulting in a semi-spontaneously fermented ale.
