A reimagined ancient beer style with roots in Hannover, Germany, brewed with air-dried barley, wheat, and a blend of two wild and two hefeweizen yeast strains. Bright aromas of lemon peel, red berries, and a subtle hint of banana lead into a light-bodied, yeast-forward profile. A gentle funk and mild acidity add complexity without overwhelming the palate. Traditionally served 'mit Hefe'--with the yeast roused before pouring--for full expression.
