Black Forest is an exciting collaboration with the perpetually-creative Sebastian Sauer of Stolberg, Germany’s celebrated Freigeist. When we proposed a sour ale based on the classic Schwarzwälder Kirschtorte, Sebastian was excited to help design a dense, rich cake-like sour. Brewed with velvety dark malts, fermented with a mixed culture in our oak foeder, refermented on tart Montmorency cherries, and conditioned on rich cacao, this is an uncompromising and complex sipper.
