For this Kweepeer, we macerated quinces for over six months on a mix of two- and three-year-old lambik. We then blended this with very young lambik to continue fermentation in the bottle. The lambikken in this blend come from five different barrels and seven different brews, crafted by both Lindemans (30%) and 3 Fonteinen. Of the grains used in the 3 Fonteinen brews, a quarter were sourced from our own Pajottenland cereal collective. The weighted average age of the blend at the time of bottling was over 40 months.
