This iteration of Dummy underwent a primary fermentation with our house saison yeast and then a secondary fermentation with one of our favorite strains of Brettanomyces. It was dry hopped with New Zealand grown Nelson Sauvin hops. This beer is bottle (and keg!) conditioned. Dummy is dry with notes of orange peel, leather, gooseberry & bretty funk. It pairs wonderfully with rich foods such as charcuterie & cheese.
